Amazing. If you can get this going consistently no need to change what you’re doing! Great job! Been doing this for years we all strive for this.
Tunneling indicates under-fermented. This graphic helped me a lot on understanding crumb results.

Looks good. I’ve noticed that adding cheese can create those pockets. It might be the oil.
