* 6 large eggs * 1 tsp pepper * 1 tsp salt * 1 cup pieces or slices mushrooms * 1/4 cup chopped red onion * 4 oz turkey sausage * 1/2 cup chopped red pepper * 1/2 cup grated parmesan cheese
Directions
* Slice mushrooms, chop bell pepper and red onion. * In medium skillet combine turkey sausage, onion and bell peppers, cook over medium heat until all pink is gone. Reduce heat to low. * In mixing bowl combine 6 large eggs and a dash of half and half, briskly whisk until combined. Pour mixture into skillet and add the sliced mushrooms. * Cook on low for 10 minutes or until edges appear firm, transfer to oven and cook for 5 minutes or until apppears done. Remove from oven. * Grate the parmesan cheese, sprinkle on top and enjoy! * Great for South Beach diet.
