Are you sure they are going to ripen? I’ve never known green peppers to ripen once picked.

I’ve learned something today. I did take time to google after your answer. Though there are sites that say they won’t ripen, there were several sites that I trust that state they will.

They will not ripen any longer. The color of the skin may change but they are officially done ripening.

Love em like that. Mince with some red onion and add lime juice. Absolutely delicious.

They do not ripen any more once picked. They may change color a bit but the flavor will not develop and the seeds will not turn more viable.
