On a Medium Egg.
I know why they say these are overnight cooks. I’m about 7 hours in, and not quite done. But we’re planning on having late night, pulled pork tacos with homemade BBQ sauce and tortillas while we watch the fireworks from home and on tv.
It’s just me and my gf, and about 2 weeks worth of leftover pork when we’re done!

Good looking crust.
Picked up one the other day to cook. Any tips? I’ve only done pizza and a chicken so far.
Check your internal temp away from the bone. Optimal temperature is 205-207F.
That shit freezes really well in case you get sick of the leftovers. My pro tip on that, if it’s just the two of you: fill up a bunch of quart freezer ziplocks so you can thaw enough for the two of you in a couple of months but not worry about leftovers.
