Instructions for base:
Step 1:
Preheat oven. Mix yeast, low carb high protein flour & 50g warm water. Let it sit.
Step 2:
Mix egg, cottage cheese, vital wheat gluten, herbs & spices to taste. (I put HEAPS of Italian seasoning, onion & garlic powder, pepper and salt.)
Step 3:
Mix the two mixtures together. Let it sit for a little while.
Step 4:
Line tray with baking paper. Pour mixture onto tray, cook at 180c for 20 minutes. Flip over and cook the other side until both sides are crispy.
Step 5:
Add toppings and cook as normal. I used low fat cheese, mushrooms and feta.
Overall this was pretty good. Next time I'll cook the base a bit longer so it's crispier, because the whole pizza was kindof soft (but not mushy or eggy.)
Also I'd recommend doubling the recipe and saving half for later (or eating them both!) which is what I did, bc where can you find 1/2 an egg?
Anyway yes, def recommend trying this.
