I messed up a little with the bulk trying out my new daisy chained heat mats and overheated the dough but it's turned out quite nicely with a soft crumb and a delicious crust.

Dough

500g doves bread flour
300g water from the sweet potato boil
250g sweet potato mash
150g levain
55g butter
25g sugar
1 large egg
13g salt

DDT 26°c

Bulk to 50% then shape into tin to finish doubling

Baked at 200°c for 45 minutes.

    How’s the flavour? You getting any flavour of sweet potato in it? I’ve tried similar ones with Pandan and while it’s good it’s very hard to get a strong enough flavour without the sourness wiping it out.
