When you don’t have time to mess around with a wire rack but you are NOT gonna let the underside lose its crisp.
This behavior may be a result of the soft underside of the other grilled cheese I had earlier today.

Okay so first of all this worked flawlessly, but also upon picking up the rear half, the front half stayed standing at that angle due to the cheese melting onto the plate and cooling, forming a sort of cheese weld between the sandwich and the plate.

I use two butter knives or two chopsticks but it’s still extra dishes
Gonna have to use your method next time!!!

I cut in triangles and stand on the crust edge, lean the two points against each other side by side. You may need to rotate the sandwhich by tipping it to the other crust edge to ensure more even cheese distribution. At worst you end up with one point slightly less cheesy
