hey hey hey this is the reddy test kitchen and i’m elizabeth it is christmas eve and today i’m coming to you with a super simple recipe for you because if you’re in a time crunch when you’re preparing your christmas dinner here is a simple side that you can whip up like one two three it’s balsamic bacon brussels sprouts so i have got here one pound of fresh brussels sprouts that i’ve washed and drained so i’m gonna have them and peel off the excess wilted leaves on the outside and just clean them up and have them like so and if you have any pieces that you think doesn’t look pretty or maybe has uh something odd in there just take it off and then half it so do that with the rest of the brussels sprouts the whole one pound and then we’ll get to frying our bacon so here we have the brussels sprouts halved and ready now we’re gonna proceed with the bacon so i have eight to ten strips of bacon halved and i’m gonna heat up a skillet and fry them up this is going to be the best recipe in hand because when you are making a ton of things for your christmas dinner table you won’t have time to make a lot of sides so the best part about this recipe is it’s such a simple one just bacon brussels sprouts seasoning and a super simple but magical glaze so just put all your bacon in there and fry them up real quick the last bits of fried bacon is coming out of that skillet and looks beautiful and crispy who doesn’t love baking oh my god that’s kind of my favorite breakfast bacon and sausages with soft crumbled eggs yes we have the bacon ready and let’s put it aside while we go about with our brussels sprouts so the pan still hot the bacon fats in there and this is the correct time that you can put in the brussels sprouts but make sure you place it like the chopped half face down so that it gets a nice char on it and that is exactly why i love using a skillet for it you can always use the oven to roast the sprouts but this is i feel this is quicker and it gets nice and roasted and charred at the bottom in the baking path so this has like an amazing flavor to it also if you feel that you have used like low sodium bacon or like low fat and if you want to season it more it’s best that you do it at this time like add salt pepper garlic herbs whatever you want so it’s all up to you this is a very versatile and flexible recipe so make it your own so the brussels sprouts are getting nice and charred can you see that it looks really nice and done almost done so this is the point where i like to add a bit of garlic and a bit of salt and pepper to it so here we go some salt and some pepper i always like my pepper freshly ground i feel that it gives a lot more flavor to whatever you’re making so this i guess is one investment that i won’t mind making because this is such a handy thing to have the peppermill the garlic is in there the pepper the salt and we’re giving it one final toss as you can see the bottoms are nicely charred and the top is glossy and really shiny green so that is what we are looking for we don’t want to overcook it we want that nice crunchy bite and the garlic don’t overcook it because it’s gonna be really bitter if you do that so make sure you take it off the flame right when you feel like the raw smell of the garlic is all gone and settled so i think this is pretty good and done so let’s get it off the flame so we have plated the brussels sprouts and now we’re gonna crumble in some bacon you can always chop it but if you have the option of crumbling then why waste the effort on a cutting board so that’s how we’re going to finish it mount the bacon on top and the final star of the plate is going to be the glaze so here we have the organic finishing olive oil the premium from pomegranate balsamic vinegar and the pomegranate balsamic vinaigrette you can actually use any of these to top off salads your cheese boat and it has so many uses and this is one amazing gift that you can give to your friends or family for this holidays so here i have an example of how i’ve used the pomegranate balsamic vinegar and made a reduction out of it i’ve just boiled one cup of the pomegranate balsamic vinegar and reduced it until it’s just half a cup so it’s nothing but pure balsamic vinegar reduced and thickened it’s glossy and thick like molasses and this is so perfect for drizzling your salads your cheeseboard or anything you like that is one option or else you can just use our balsamic vinaigrette directly onto the brussels sprouts or maybe you can just finish it off with olive oil if you’re not a fan of balsamic but for me balsamic bacon brussels sprouts you know is something that is simple and tasty at the same time so and i love my balsamic in there so i’m gonna do a bit of the glaze on top and i like to do a bit of olive oil in there too because i feel it gives it a lot more flavor so it’s all up to you you can do honey you can do the balsamic reduction that we just talked about and also you can just finish off with a vinaigrette it’s all up to you here we have the balsamic bacon brussels sprouts done and ready it is super easy it’s such a last minute thing that you can always whip up so
