Ok I got too carried away adding too much tofu but YOLO. I made a quick dressing of ginger, garlic, rice vinegar, soy sauce, and a touch of sesame oil. I added a serving of PB Fit to the bowl on a lark and it added the nuttiness I was craving. Throw in whatever veggies you have on hand (I had frozen edamame and raw carrots). The only “cooking” this dish requires is boiling water for the noodles, perfect for summer. This baby kicks tires has a whopping 51 grams of protein and 14 grams of fiber so it should keep you full for a long looooong time. Happy eating!
