Started a sourdough starter from scratch (just flour and water) about 3 weeks ago and made my first loaf! I don’t have a Dutch oven so I just stacked two loaf pans on top of each other, but any advice is much appreciated!
80 g starter
250 g water
350 g AP flour
10 g salt

What flour did you use for your starter?
Recipe (kinda):
Combine ingredients and let rest 30 minutes
Two sets of stretch and folds 45 mins apart
Wait 45 mins, coil folds
Wait 4 hours, shape and prep for cold ferment
12 hour cold ferment
Preheat 450F, bake at 400F 20 mins covered 25 mins uncovered
