    250F with plate setter until 115F internal. Removed tri tip and plate setter, brought Egg to 500. Four minutes a side. Pulled at 130F internal. Ten minute rest.

    Looks great….had not considered searing on the backside of the cook. I will give that a try with flank steak as well.

    Looks amazing. I would have probably gone a few degrees less, personally. But that is exactly how my wife would love it.
