It’s taken me a long time to just accept this is the GOAT condiment.
Chili oils, chili crisps, Sriracha, various other hot sauces…they all have their places, but if I were to just have one for the rest of my life, nothing hits like fish sauce with Thai chili's (with some lime every now and then).

Add some soft brown sugar to it. Goes amazingly well with grilled chicken.

Had fish tacos with a blended sauce of Thai chili, garlic, brown sugar, and fish sauce, and I could easily eat that for the rest of my life. Probably the 10th time my wife and have made it and it tastes as good, if not better, than the first.

Ohh yes – I love these style sauces, a lot of variants going around SEA.
You can also play around with what kinds of fish sauce / acids or vinegar you use, e.g. Squid brand vs Three Crabs brand fish sauces, palm vinegar vs. white vinegar – or lime/lemon. The version of Mien sauce I make has crushed diced and crushed tomatoes in it to tone down the chilis. Just saying that you can change it to how you like!

Fish sauce, vinegar, very very little sesame oil, lime, ponzu, and birds eyes. I use that just about anytime I do any sort of Asian dish. I also keep a homemade batch of that that I let steep in a dark cold room while burping with cabbage to make this really stinky spicy “Kim che-hee!”
