Recipe: 330g water, 100g starter, 400g bread flour, 50g whole wheat flour, 10g sea salt
Process: Mix ingredients, 6 sets of coil folds (8x each) every 20 min for 2 hrs, bulk ferment for 3.5 hrs, pre-shape, bench rest 30 min, shape, cold proof 18 hrs, score, spray with water, bake in DO at 500°F for 40 min lid on + 20 min lid off with baking tray on lower rack
