Desserts that are refreshing pair best with BBQ. Especially in the summer time. My Granny made Pineapple Upside Down Cake for me all the time growing up. I love cooking this easy dessert outside on a pellet grill because everything tastes better when you cook it outside. This dessert is so easy, as all you have to do is be able to read the instructions on the store bought cake mix.

hey I’m Matt with me Church let’s make this pineapple upside down [Music] cake welcome back to the show today I’m really excited about pineapple upside down cake is something that my grandmothers Made For Me on every birthday it’s really good but why am I doing this here you know on our cooking show well you guys asked for it we’ve only got one previous video on desserts it is chocolate pecan cobbler actually the first thing I ever demoed in outdoor cooking so you could call me a Betty Crocker of the outdoor cooking world of sorts but it’s summertime you guys are having barbecues you’re having people over and refreshing desserts pair with barbecue so what do I mean by that if you go enter a KCBS competition and you enter the dessert category a refreshing or creamy dessert works really well so coconut cream pie uh cheesecakes so a pineapple upside down cake with the liquid from the pineapple the brown sugar soaked down into the cake is going to be very refreshing and pairs with barbecue awesomely and you don’t have to be skilled to do this because you’re literally going to follow the directions on the cake mix and just add a couple other things and we’re going to cook it outside because everything cooked outside tastes better and is more fun so let’s jump right into this what we’re going to do we’ve got ourselves as any old yellow cake mix it doesn’t matter we opted for the Duncan hind Dolly Parton favorite yellow cake mix looking at this art I don’t think that dolly is to scale but we’re going to go with it so on this box again just whatever you buy works this one is 1 and 1/2 cups milk four large eggs and 10 tablespoons of melted butter plus the cake mix so we’re going to mix that together so I’ve already got a cake mix in a bowl and I’ve already whipped up four eggs I’ve got my butter melted over here the 10 tablespoons of butter and we’re just going to mix this up all right got that start be mixed up now we’ve got to put the the liquid in so the the Box calls for 1 and 1/2 cups of milk so what I’m going to do is I’m actually going to go one cup of milk so you can just go one and half cups of milks and call it good so let’s just go one cup of milk here I’m going to kick it up a notch and add a little bourbon so one cup milk half cup of bourbon this is optional and I’m using Pursuit bourbon one of my favorite Bourbons in the world award-winning and I know what some of y’all are thinking I’ve got kids what about that bourbon is it going to cook down is it going to affect them I don’t know if you ever met my 11-year-old but I hope it doesn’t cook down and I hope it calms him the down but this is going to be delicious if you want to do it mix that together and then Pro tip if the consistency is how you like it or a little thick add a little pineapple juice into that as well all right now that it’s nice and Incorporated and you look at the consistency I can see it can take a little more pineapple juice which is going to add a great flavor mix that in all right set it aside and let’s move on to the next step so I’ve got a little bit of butter that I’ve melted in a pan in the cast iron pan it’s like a third of cup of butter and this is a number nine Griswald vintage Skillet and I’ve got one cup of light brown sugar so you just want to coat the bottom of this pan so just move the sugar all around it and then we’re going to lay our pineapples in all right so now let’s take pineapples this just canned pineapple and you’re going to spread them out you know try to make sure that you’re using a pan where they all fit in here uh nicely all right pineapples are in now it’s time to add some cherries all right now it’s all nice and pretty and we’re just going to pour um our cake mix on top so obviously later we’re going to flip this upside down and all of this butter and brown sugar will come kind of you know just like melt into the cake uh so to speak all right I’m just going to make this uh just kind of make this nice and even in the pan remember this is going to get flipped later so just doesn’t matter too much let’s talk about cooking very very simple 350° I’m going in a pellet grill why am I choing a pellet grill today I don’t like to use smokers for high temperatures uh personally um I just you know I’ve got some pits that I paint jobs on them you don’t want it to to flake off it would actually work in my offset if I want but in this particular case a pellet grill is great for dessert because I’m going to use cherry wood I like lighter smoking woods so fruit Woods in this case for dessert so that the smoke is subtle and it’s only going to be in for 40 minutes at a high temperature so there’s not going to be a lot of smoke anyway but we’re doing 350° for 4 40 minutes with cherry pellets on a triger tamberline XL and during the cook I will end up rotating it one time just for kind of safety sake I like to do that in pellet grills but that’s not really necessary you can cook this in whatever you want um you cook in the oven it’s not going to be as fun so in we [Music] go all right like I said in 20 minutes we’re going to just kind of spin it about halfway to make sure it Cooks evenly and and then we’ll see you back here in 40 [Music] minutes all right so you have to put a plate big enough to flip this on in this case I’ve used a little board cuz I think this will work nicely and you want to go ahead and flip it immediately now it’s an upside down cake let this sit for 5 minutes now all of that brown sugar and butter is seeping down into the cake so we’re going to let this sit for 5 minutes and then check it out it’s been 5 minutes let’s remove the pan oh yeah that looks awesome I wish I could smell this okay well I’m going to go get the perfect drink to pair with this and a fork and I’ll be back found myself a drink AKA a Pursuit Spirits bourbon oldfashioned delicious okay well let’s look at this thing here so what I want to show you guys all the dark colors up here at the top this is where that brown sugar has seeped down into the cake which is key you got to have that uh to get that juicy bite so you know there’s all kinds of uh you know there’s bourbon inside there there’s pineapple juice but this brown on top is all that melted brown sugar from when we flipped it so I’ve got one less than perfect pineapple over here I’m going to cut there all right there’s all that brown sugar I’m going out here I’m going out here on the edge to get extra Brown sugar actually I got to I get get a pineapple there we go got get a real bite dude that is so good that’s summertime barbecue refreshing right there man y’all have to do that if you can read the directions on a cake mix box you can do that there’s definitely a just a subtle bourbon taste actually gives it a really good pairing it’s not some overwhelming taste my wife doesn’t love Bourbon and she would like this for sure well this is going in our summer grilling playlist uh you guys Glad to see some of your "non-meat" recipes. You have plenty of grills to have several fired up at once. But how would you cook a whole meal on a Weber kettle? Not me. I have one 22" Kettle. So, the meat course is something I usually do low and slow. What would you do after you take off the meat (brisket/tri-tip, ribs, etc.) and move on to other items? When switching to grilling some vegetables and other food (read NOT SLOW) items, I have difficulty getting the second stage right when switching to gears while the meat is resting. How do you go from a two-zone setup for the meat to a one-zone setup for the rest?

I have that same exact pan, I used the recipe by the book, but I had way too much cake batter. I saw that yours fit in the pan with no issue…. I dumped my batter in the pan and it filled my pan to the top. Needless to say, it bubbled over and it took mine about 1.5 hours to get done. I used 1 cup milk 1/4 cup bourbon and 1/4 pineapple juice. I used the house oven to give it my first try and I must say it was damn good. Just enough bourbon to taste it but not to much to overwhelm it. I will do this again and cook it on my drum tomorrow or Sunday. Great recipe. Quick and easy.

Testing this out RIGHT NOW!!!!! Hopefully it comes out good, I didn't read the box of yellow cake before I bought and it said one cup of water. So I used two boxes so I did 3/4 bourbon and 1 cup and 1/4 bourbon. Hopefully this all evens out man
