well hello the friends they been got aide today I’m making a zucchini pancake the Megan special I add a little bit yellow squash in there and I’m going to put a little buttermilk little garlic all kind of goodies and we’re going to make them nice and crispy and they are delicious you can serve them as a side you can serve them as an appetizer you can just serve them as a little snack in the afternoon I’m going to share all My Little Secret and I have a special sauce I’m going to serve it with friends I’m glad you’re here remember thumbs up if you like the video or forget subscribe to the channel and don’t forget to ring the bell stay tuned we’re doing them right now [Applause] together okay friends well let me share my secret because there’s a lot involved there in doing zucchini cake to do them right I see a lot of people doing it momy this recipe works okay friends so I got two pound a little bit over two pound between the zucchini and the yellow squash you can just make zucchini you can just make yellow squash I just added the yellow squash cuz he added little color it’s really nice so this is like one pound and a half and maybe they had a pound they had half a pound of zucchini the total weight it was two pound of of of squash look look at the water friends so what I do is I shred him right and look at the water this is this this is amazing um what I do is I I I put a shred them and I put a salt on it uh uh total amount of salt between those two of them was three teaspoon two over here one over here and uh and and and then you just mix them up and let it go for a few hours if you have time do it the day before let you got to let it get the water out that’s the only way to do it you know salt does that salt drolls the moist out okay so so what I’m going to do friends I’m going to get rid of more water so I got a cheesecloth right there you can use a muslin muslin fabric muslin fabric a cheesecloth you can use a a b whatever you got whatever you got right so um you can squeeze them see squeeze them look look look look look the still is water coming out of there it’s amazing is it so what we do we take we got to get away of that water so what I do is I put put it here right there you see and then I do the same with a with a zucchini with a yellow squash and it’s amazing the amount of water friends absolutely amazing you take it right there right let me just get all the water out of there let me just go me take this out of there friends out of the way amazing how much water they released I’m telling you so what I do is I take my uh cheesecloth byata whatever you got right and you take them and this is very good to get rid of all the moisture you see friends and you squeeze it look at this you see this you must do friends you got no choice that’s why I wanted to do it in front of you so you could see how much moisture after all of that water if you look at between the the weight of the water and the and the actual vegetables there’s not much left it’s it’s amazing well you know it’s like our our body I think we are like 80 90% water you know how much percentage we have Jack 80 90% water it take all the water out of us we’re nothing that’s amazing I always say that is true see look look don’t be afraid now I’m going to get her here there you go my friend look at the mess I made W okay well you could go a little more if you have a little time okay I’m going to leave it here for a minute now I’m going to get rid of this look at the mess I made let me clean up my area and then I can go and continue working all right friends I like a nice and clean Anton is going to go Mama me how many Bal do you diry today Chef so look we’re going to go in there friends and we’re going to make we’re going to make the butter so to make a butter you need the eggs so I got three eggs okay and I got a half a cup of butter milk we got ourself a bottle pretty simple right nothing to it all right now we got our s a butter okay now we’re going to put a little bit of black peer pepper in there and the salt we’re going to wait for the salt friends we have enough salt actually because of uh the three teaspoon I put in before I know a lot of them came out you know I add just a little bit of salt a pinch how is that a pinch maybe two pinch what do you think two pinch two pinch of salt I got a quarter of a red onion quarter of a red onion I got uh uh 2 tspoon of finely chopped uh uh dry uh Sund dry Tomatoes you don’t have them don’t put them in it’s not that big of a deal like oh mama m i don’t have Sund drry tomato I can’t make the recipe not really it’ll be perfect if you don’t have it okay and if you don’t have a red onion you have a regular onion great you have shots great substitute let’s have fun Okay cooking is like making love you got to know how to substitute things one tablespoon of oregano you don’t have oregano put thyme put Rosemary whatever you want okay it’s cooking we’re having fun one teaspoon of baking soda one teaspoon of baking powder so far so good right you have to admit I don’t do anything complicated you know that look A zest of a lemon that’s going to wake up everything zest of a lemon remember how you use the lemon right for the new subscriber friends if you are not sure how to use the the grader correctly because this is the right way to do it we made a short showing you how to use The microplane Grater correctly okay just in case you haven’t seen it yet Jack is going to give you a link over there look look look how cool that see boom you got everything right there pretty good right you could also at this point f f friends put some uh hot sauce if you want to you can spice it up a little bit little bit of Arisa a bit of shiraa Shira Arisa delicious here you go look smells amazing I’m telling you if it smells amazing if it looks amazing it is a good chance it’s going to be amazing one cup of flour 5 oz of cheddar cheese you don’t want to put the cheddar cheese in there you can put whatever cheese you want let’s squeeze a little more water let’s see let’s see what we get okay I’m done let’s squeeze the water let’s take this and put it all in there now you know you can wash those fabric if you want to I buy about a big roll so I don’t wash them but you’re good you’re good wash them all right now we’re going to mix all this up really well then we’re going to put our 5 oz of uh English cheddar and then I’m going to get a spatula let me tell you yeah CU spatula is going to be easy to mix to mix F see that’s what happened look at the mess I made mom m here I got stuff everywhere see so here we go friends all right now we’re going to put the flour let’s turn this on I got a fight band with a one cup of flour you got to put a half a cup first mix that up and then we’re going to put another half a cup and they they look good don’t they they look good you know I like to make food look good I think it’s very important as we know we eat with the eye first if something looks good is a good chance it’s going to taste better not always right sometime you go to restaurant and you order food and oh wow that looks great you put in your mouth and go hello where’s the flavor in there this is going to be nice you see now we’re going to cook them in the in olive oil you can do it in whatever oil you want you could put the vegetable oil you could put whatever oil you want I don’t want to be some people don’t like certain oil you know it’s okay grape seed oil is a wonderful oil to use doesn’t have very much flavor I love olive oil obviously I’ve used olive oil my whole life and um so this is perfect now all we’re going to do friends you put them in the pan you see look you know what I think I could use I could use another half a cup of um of Buttermilk I’m going to put another half a cup of Buttermilk friends I got it right there half a cup of Buttermilk so I had a half a cup so now it’s two cup no M me half a cup plus a half a cup two cup just uh let’s see want to put a quarter cup first I want it to be just a little bit more liquid and you know I think that’s it so yeah so total 3/4 of cup all right yeah yeah yeah look you see you see you see friends it looks perfect it looks perfect all right now what you could do also when at this point you could you could just do one and test it to see if it’s your to your liking you want to put it almost Spice in it you can put it you can do up to you let’s check the oil temperature we don’t want it to be too hot cuz if it’s too hot it’s going to burn right away so 300 is all I want and I got 300 I’m going to take a a an ice cream scoop so they’re all about the same size but that doesn’t really matter it’s up to you friends no more than 300 the oil otherwise you’re going to burn them okay and we’re not too concern about what if they look perfect or not okay which is remember the first one always at 12:00 right first one 12:00 second one 3:00 then we know which one we did the first which one we did the second they might be a little too big but it’s okay see let I let me do one a little smaller just to see if I like him better that way put this guy right there all right remember the oil cannot be too hot friends if you oil is too hot they’re going to burn right away and they’re not going to have time to cook yeah they little big little big but this will be great for an appetizer it’ll be great for an appetizer and you know what I’m going to do I’m going to serve them with the um uh takiki sauce the Greek yogurt sauce I know that’s not how you say it but uh I make a delicious taiki is that what it say Jack taiki and uh I make a delicious one and um oh you know what I’ll make you a recipe of it I’ll release a recipe in the next couple days so you guys can have it or maybe we’ll do it before release this one eh we’ll have to see all right friends I’m going to take a couple of minutes to do this okay I want them to set before I even concentrate on uh on on on flipping them okay I’m at 276 I’m a little low because obviously they’re reduced but that’s okay so now we’re going to let them cook for a minute or two okay and then we’re going to flip them all right okay friends we’re want to flip it now be careful with this okay they a little fragile right so you take him right there and boom beautiful beautiful beautiful little fragile so be careful just you take it make sure you got a nice spatula right there and then boom little F beautiful beautiful beautiful let’s take it take a pizza give it a good see have another one just in case you need it beautiful look at that gorgeous they’re going to now we’re going to cook them very slow see the secret look look look how low my heat is I don’t know if you can see it right there but it’s very low very low it’s a secret otherwise you got you if you go too high you like they burn right away and then they don’t cook it’s like a pancake it’s got a cook so you got to give it time give it love I promise you those friends now I made the um chak ch ch I can’t say it I one of these days I’m going to learn a p but but I tell you what it’s as good as any anyi you’ve ever had M it’s not a mushroom oh thank goodness I’m having fun Imagine That H God Bless America I love my life I love my life how can you not love your life you do what you love to do you’re having fun doing it you’re working with fantastic people life is good my friends life is what you make out of it remember always take always my mom always said find the good I don’t care what it is there’s a little good in there and see the way I got them right there on the plate put them on a cookie sheet with a seil pad or parment pepper and when you’re ready keep the oven hot and serve them the delicious you can make them a little smaller those are big those are delicious my friends we’re going to make that sauce for you look it up maybe we make it already before released so you can see it oh you know what’s good also with that an aoli a nice garlic aoli it be delicious with it you can do a bunch of stuff put shiraa in there or or the little hot sauce whichever one you have friends I hope you like it remember Very smart, Chef. You just introduced a way to use leftovers. Let’s just say cucumber sauce, for example. I make pico de gallo fresh for taco night. It sits in the fridge. My wife won’t eat it if it is titled leftover. She only ate 3 tablespoons on top of each of her tacos the night before. What is the problem? So she gets a pico and cheese omelette for breakfast. Lol.
Magnifique! You know as soon as I saw you first turn them over in the fry pan all brown and crispy, my first thought was of aoli to accompany them. I think for a spicier sauce, lemon and sriracha, with either yogurt or mayo, mixed with a teaspoon of ketchup would really work. I don't like cucumber,otherwise the tzadziki would be the one to try. I made them last night. Excellent. Chef likes garlic waay more than I, so only one small clove, also skipped the dried tomatoes as I am not a big fan and added parsley, as well as the fresh oregano, because it is flourishing in the garden. Otherwise Chef was spot on as usual. Delicious dish.
