I fried off the aubergine and onion uncovered in 10ml oil, then added thyme, oregano, stock concentrate, garlic, and fried it off. Then I deflated with soy sauce and white wine vinegar, added halved tomatoes and covered until they were soft, then stirred the orzo in the mix and left it for a minute. Then I added about a pint of water, boiled it for about 20mins covered (stirring every min or so), placed it in bowls, then placed the feta on top.
