I’m still a beginner (I think this is my 6th loaf). But I’m feeling so much more confident! Especially with the 1:2:2 feed ratio. So much more active than before!
Recipe:
• 450g Bread Flour (I use King Aurther’s)
• 292g warm water
• 8g salt
• 90g starter
Fed my starter the night before and let it get to room temp (1:2:2 ratio)
Mix all together and sit for 15mins.
Every 30 mins for 2 hours stretch and fold
bulk is 8-10 hours
Shape and place in the fridge for 12 hours
(Still working on my scoring lol)
Bake at 450, lid on 20 mins, lid off 30 mins
Let cool for at least 2 hours
