First time short ribs stew. I used a cast iron wok and covered it with aluminium foil because my dutch oven was to small. The meat was delicious!!

    So, how did this start.?
    Short ribs, plain , dry rub?
    Any liquid in cast iron plan ?
    Covered with tinfoil from beginning or after a time?
    How long?
    Rest or rapped in paper and towel?
    Was there any juice in pan worth making a sauce with??
    I ask cause it looks great and I did some short ribs a while back and I didn’t do it great, looked great , but wasn’t as good as I’d hoped.

    I’m a newbie at Kamado Joe having just received the Classic one two weeks ago. Made beef short ribs. They were awful. Tough.
