welcome you just tune in to the endless connection podcast where Wellness has no bounds where we unravel the threads of wellness and connect mind body and spirit welcome to ‘s connections kitchen I’m Farah Andre not your typical Wellness nurse and I’ll be your guide through this journey of wellness and self-discovery today we’ll be preparing a tomato soup with grilled cheese it’s the season for it for some Comforts and we’re just going to go on this journey together where the easiest simplest dishes is right here tune in to your kitchen [Music] as many of you will learn about me I love to use fresh ingrediences that will enhance more of the flavor and take away from the additives that you might purchase in the market or from a different location so for our ingredients we have fresh ripened tomatoes please feel free to use whatever Tomatoes you like cup of vegetable broth feel free to make your own fresh broth I will go into that in the future about how to do that but for today we are taking a shortcut and we’re using a vegetable broth from the store we also have red pepper to add flavor carrots white onion and purple onions for flavor and enhancement of your palette we also have coconut milk feel free to use this to thicken up your tomato soup but you could also use tomato paste or you could use corn starch we’ll get into that we have ginger for extra flavor but also to help with your digestive system if there’s any underlying issues feel free to use fresh garlic these have been peeled for us we also have basil but you could also use fresh basil if you have some in your garden or your local farmers market or Market as well and for our seasoning we have salt pepper turmeric chicken bu we have papra we have some Cajun seasoned salt and we also have some brown sugar we have oil olive oil for that matter for our grilled cheese we’ll be using the ingredients of guda cheese which we grated and shredded havar cheese we also have sliced cheddar cheese and of course you to use any cheese that you like if you’re vegan based please feel free to use the cheese of your choice for the bread we will be using the Texas toast but please improvise as needed along the way as you get to know me on this journey you’ll realize how much I love to use fresh produce for multiple reasons for one it’s healthier saves you money time and energy meal prepping makes this easier as well is actually beneficial for your body as a neutop wellness nurse you know I like to talk about different variety of options to help your body heal during this process especially through these Seasons that we are changing climates the weather’s getting colder so as you’re inviting comfort food into your journey you want to be mindful of picking the right fresh produce to help you along your journey to heal on a optimal longevity level I did jump start and got things pre- started for us and I have chopped up a lot of the vegetables that we’ll be using in our tomato soup that would be Tomatoes I use half a white onion half a Purple Onion a whole carrot and of course the Tomato itself I roughly chopped everything I will show you demonstrate how I would like you to imitate The Cutting skills with the pepper just to give you an idea but I like to add flavor I’m all about Flavor natural flavor fresh flavors when it comes to me making certain types of foods especially tomato soup you want that hearty comforted feeling that you get from other vegetables that a tomato simply cannot provide so here we go so for our pepper we’re going to cut it straight down the middle we’re going to actually take out the seeds the seed it the white flesh I heard and was taught that it’s not too tasty and flavorful so you want to be mindful and cutting out that flesh out and then we’re going to go straight into washing our pepper and then we’re going to move on to chopping it up you’re going to take your first half we’re going to slice that down the middle nothing cute you don’t need to be too fancy with this for those who don’t know how to cook this be a great time for you to dive in and just a little something about me in the kitchen it’s very therapeutic if you have a passion for cooking if you don’t it’s a great way to learn how to cook it’s really not that hard things could be as easy as you want you can actually tap into your creativity when it comes to your palette what you don’t like what you do like things you could actually learn from cooking shows that I love to do you could also go to restaurants read what they put into their recipes and when they cook foods that you like to buy so you can save yourself $100 or or more and just make it yourself all right so we’re going to finish chopping up our pepper and we’re just going to toss it in with our precut vegetables that we already have and I can also show you these Tomatoes already have been washed and I can show you how to cut that as well okay and we’re going to go straight down the middle don’t mind my knife it’s a little dull and you’re just going to cut it straight straight in half then half again and then you could just dice it so nothing fancy this is what it will look like real easy real simple don’t need a PhD for this part all right so now that we have all vegetables ready for our tomato soup we are going to season our vegetables this is very important I am a big person on Flavor so when it comes to recipes we don’t really talk about half a teaspoon a tablespoon we usually just toss it in taste as we go and then we Elevate and add as we need to for my culture being Haitian we definitely don’t do recipes but in the convenience of your home and mine I’m going to share some of that with you all the seasonings that I have mentioned earlier I didn’t mention earlier but I mention it now is all tablespoons so we could use as much or as little as you like we could start off real basic and then elev from there so what we’re going to do is we’re going to take our olive oil and we’re going to put it right in there we have black ground pepper and we’re going to sprinkle it in there we have paprika one of my favorite seasonings to elevate The Taste and flavor and the aroma from this vegetables when they fresh is a whole another elevation of smell therapy over here it just feels different it tastes different it makes you feel different energetically and I just added some turmeric some chicken bullan just a little bit here because we might add the rest in our soup if we need to we also have our creol seasoning we’re going to add on there and also for those who are diagnosed with hyper tension or any kidney issues that might be an interference please be mindful to use any substitution that you need to do I’m just giving you the basic of how I like to cook so therefore just be mindful and also consult with your PCP if you need to and doing these ingrediences we also have the Cajun seasoning to add a little heat and flavor for those who like that settle heat you could always add that into it as well and this is just a little original smoke seasoning here to add a little earthy flavor and of course I’m not a big fan of salt cuz we have a lot of other seasonings in here but I’m going to add a little sprinkle of salt here who doesn’t like salt right and you can also use use pink salt Himalayan salt which is a great substitute amongst what I have and we’re going to take some ginger this has already been washed and we’re just going to grade a little ginger in here ginger has a great underlying spice to it but it also has the effectiveness to help you digest your food while you’re eating so if you have any digestive issues I will definitely incorporate ginger in all your meals if you can or drink ginger tea all right add as much as you like all right actually going to grab my spoon here grab all the ginger so we don’t waste anything and for the garlic before I get into that I like to use my hands because you could connect with your food a little bit more when you’re cooking it’s actually therapeutic and a lot of cultures especially in Africa they eat eat with their hands to connect with the food which is very therapeutic because it’s uh people want to know the secret recipe when it comes to cooking it’s really about your intentions and your mindset and really connecting with your food feel free to use a spoon or utensil during this process like I said my hands are clean and we’re going to Dive Right on in and here we’re just going to mix all the seasoning together so it’s evenly distributed and if any of it falls out that’s okay this smells amazing by the way all right so we have that in there I’m going to wash my hands and once you have all that settled feel free to take your bowl we have a bakon pan and we have parchment paper so what we’re going to do we’re just going to evenly just pour out the vegetables onto the bacon sheet I hope you guys have a hungry family cuz this is going to make a great dish especially with the holidays coming up this could be a quick sample as a appetizer for family and friends coming by if you need something real quick this is a great way to kind of bring every you want in of course you want to drizzle the rest of whatever you have on there and we’re just going to sprad it out as evenly as we can and before we put this in the oven which I had preheated at 400° we’re going to add some garlic if you’re not a garlic fan you don’t have to use garlic you could always use garlic pepper or you can leave it out 100 % it’s really up to you this is your journey I’m just here to guide you through it as I mentioned so we’re just going to smash a few clothes of garlic I’m a garlic Le person so I apologize for my breath in advance if you ever come near me but this is a great way to add flavor to the soup and you can just take it and just toss it on top of your vegetables you can add a few whole ones on there as well you can use fresh garlic just cut off the end why is parchment paper useful in this plate in what happened is the parchment paper actually gives the vegetables a non-sticking factor so when you’re roasting and baking your ingredientses that’s on here especially the tomatoes that have a lot of juices and liquids it will actually sit on the paper without sticking and drying on the bakon sheet so what happened is when we’re ready to take it out the oven we could toss everything right into the food processor or blender and everything will still be sitting on there so it’s here to prevent from food thicking and drying out all right we have our vegetables ready we have our oven preheated at 400° we’re going to leave it in there and check up on it between 30 minutes to an hour and here we go [Music] welcome back to endless connections kitchen you know that I’m Farah Andre not your typical Wellness nurse as we know Wellness has no bounds we’re going to continue on talking about our tomato soup recipe and we’re going to actually go to our oven that was preheated at 400° and our ingredients our vegetables was roasted for the past 30 to 45 minutes we’re going to take a look at them right now ah look at this it smells delicious and be careful cuz this is really hot as you can look and see our vegetables are nice and toasted and roasted ready to be pureed this smells delicious so the question is why do I want to roast my vegetables before I puree them and what happened is you want to just pre-cook the vegetables you don’t necessarily have to but it does give it a nice texture and flavor when you add actually roast them with the Char of the oven and the vegetables being baked so it actually gives it a pre- texture of a extra elevated in taste of that oven base structure all right so we’re going to scoop all our roasted vegetables that we had in the oven into the food processor if you don’t have a food processor please feel free to use a blender today we’ll be using a fruit processor okay so we’re going to just dump all our vegetables in here with no worry in the world with food processor is a little different because there is a maximum level that you do want to follow so you are not going to make a mess and we’re just adding it all in here this smells so good well technically speaking you should let it cool um because in a blender you don’t want to put heat but if you’re a wrist taker like me you go Full Throttle right so and I feel like the liquid that we’re going to add in there will cool it down as well get right into your stomach all right now this portion is up to you if you like your tomato soup a little more of that bis type of a texture I would say you don’t have to strain this cuz we will be straining the solution for a smoother texture however go with what you love and like all right so all our vegetable is in the frood processor so this is the part where you can add your vegetable broth this will be one cup and be mindful even though you seasoned you season um your vegetables that the vegetable broth does have extra ex salt in it so just be mindful of how much seasoning that you put into your soup I am going to put a little bit of the coconut milk now the coconut milk is to add a little thickness to the soup however some people may not want to use coconut milk I’m a non-dairy person just stay away from dairy products so you could use whatever milk you like however some people use half and half some people use coconut milk or tomato paste or even corn to thicken up your soup and we also want to add basil for Flavor now you could use fresh basil these are pre- chopped up you know I’m all about Flavor so I’m going to dump the whole thing in here okay and then you’re going to cover up your food processor or your blender make sure everything is secure cuz I don’t want to give anyone a shower with this beautiful thing and we’re just going to turn it on okay ready guys look at that just got to the I like it I’m going to add a little bit of milk in here so for milk options I’m going to go over that with you I use coconut milk because that’s just my preference it has a the preferably non sweetening taste to it but it also brings in that thickness that I like about it however cream half and half also has a thickening consistency to it as well I’m just not prone to the dairy products like I mentioned so however you can use any milk product you like just be mindful that it does change the taste and the consistency of your soup so just be mindful with that but you could explore your options I just used coconut milk cuz it was more of a Balan and it actually doesn’t overpower the taste of my soup once we’re done with our vegetables and the puree process once we’re done processing our food into a puree texture now the texture is going to already be in that bis form so if this is the part where you want your tomato soup to be a little more uh chunkier in texture this is where I will leave it at however if you want a more smoother consistency you’re going to have to strain it through so we’re going to run it through our strainer and you can say save half of it if you like for more of that b flavor and you’re just going to run it through like the food processor and the blender gives the vegetable different texture so once you pass everything through your strainer I’m at my last bit you’ll have a smoother tomato base for your soup but you could also add this to your soup as well and turn into a best whichever you prefer we’re going to move our pot to the stove where this is going to simmer and thicken on a stove top okay so this is where if you’re interested in adding milk you can add more milk for thickener you could also add corn starch with a little bit of water and help that thicken as well or you can add tomato paste for coloring and as a thickener as well so we’re all set with that this is the part where you should be tasting your food as well to make sure if you need to add any seasoning this is a great time to do that grab a spoon and we’re just going to taste this a little bit perfect and we’re back as our soup is simmering and getting thicken on the stove top we’re going to pair it with a three cheese blend grilled cheese why three cheeses well why not so for our grilled cheeses we’re going to use three cheeses I have the as we mentioned earlier we have guda which is really great and gooey and we have the Harari cheese as well we’re going to be using the Texas toast but feel free to use any type of bread that you have available at home we’re also going to use a pan instead of The Griddle whichever is your preference is great I just feel like The Panini kind of cooks it on both sides and it kind of gives it that even cook and so you don’t have to worry about flipping it so often anyway so we have our toast ready we’re going to take a slice of the cheddar cheese we’re going to throw it right on there and we’re going to take a handful of the Gudda and the Harvey cheese we’re going to sprinkle it on there just like so and I can’t say enough how amazing this kitchen smells and in between all that if you want to throw another slice of cheese on there by all means go ahead cuz why not it’s a grilled cheese looking like a Big Mac over here and we’re going to do the same thing for our second grilled cheese we’re going to throw in a slice of cheddar a handful of shredded gouda and harvet cheese going to spread it around there and another slice of cheddar cheese right on top and by all means if you love tomato you could even flip and add a slice of tomato or two on here to peer it really well with your grilled cheese we’re going to take this Hefty Big Mac of a cheese put it right on the Panini I love that sound sounds great and we’re going to put that over here and we’re going to close if it will close now welcome back we are finally cooking down our soup it is ready to go it smells delightful so we are going to Plate our soup in a luscious plateable Bowl plate in any of your favorite soup BS oh this looks delicious so here you go with that and we’re going to check in on our grilled cheese yes it’s a mess but what is a grilled cheese if it’s not a mess okay and we’re going to scoop up our first grilled cheese oh look at that I just the lines from The Panini this is great and I’m not going to make this look any cuter cuz it’s a grilled cheese and that’s your first one and of course your second one this one’s not too great looking but that’s okay cuz a grilled cheese is supposed to be messy and we’re going to add our bowl of tomato soup right next to it by all means if you want to add your favorite topping on here that’s great but we’re going to add more cheese I love pomon will be great with this of course you don’t want it flying just to add a little texture and a little cheesiness to that and tie it in for what you have and that will be your dish for dinner lunch peer it with your favorite favorite salad and enjoy so one thing that I know you guys are probably wondering is how do I talk about healthy food and incorporate bad foods with it my whole theory about Wellness is that yes we’re supposed to help our bodies by eating the freshest of foods but also incorporate some of the not so great foods like a grilled cheese or a glass of wine everything is about Duality and balance so yes you’ll find me making healthy things but also options that could be beneficial through your journey it’s all about balance welcoming the dairy with the non-dairy learning to improve your cooking skills with different options whether it’s healthy or not so healthy but we’ll go take that Journey any way that you like and this is why you should be testing out your creativity in the kitchen and using your palette for what works best for you as we
