Keto Chicken bacon ranch zucchini boats

    Ingredients

    * 2 medium zucchini
    * 2 cups chicken, cooked and shredded
    * 4 slices bacon, cooked and chopped
    * 3 ounces cream cheese
    * 1/4 cup ranch dressing
    * 1 tablespoon dry ranch seasoning
    * 1 cup shredded cheddar, divided

    Instructions

    1. Preheat oven to 350 degrees
    2. Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a “boat”
    3. Place the hollowed zucchini in a 9×13 baking dish.
    4. In a medium size mixing bowl combine the cooked chicken, half the cooked bacon, cream cheese, ranch dressing, ranch seasoning, and half the shredded cheddar.
    5. Top with the remaining shredded cheddar
    6. Bake 20-24 minutes until zucchini is fork tender.
    7. Top with remaining cooked bacon before serving
