Stuffed bell peppers! 350 cals and 25g protein per pepper/serving.

    Recipe is my own but baking times were adapted from someone else’s recipe! This makes 5 stuffed peppers.

    Bell Peppers:

    5 Bell peppers, similar size

    1lb ground turkey

    1 small yellow onion, diced

    2 1/2 tbsp minced garlic

    3/4 cup marinara

    1 1/2 tsp paprika

    1 tsp dried oregano

    1 tsp dried basil

    1/2 tsp garlic powder

    1/4 tsp black pepper

    1 tsp worcestershire sauce

    1/2 cup cooked white rice

    1 cup mozzarella cheese

    Preheat oven to 425°F.

    Bring a pot of water to a boil (enough to cover the peppers.)

    Scoop out inside the peppers. Cut off the tops and chop up the edible parts of the top for later. Boil the peppers (not the chopped tops) for 5 minutes.

    Set boiled peppers in lightly greased baking dish.

    Add onion and chopped pepper tops to a greased pan on medium heat.

    Add garlic and cook 1 minute. Add meat and cook 5-6 minutes.
    Add marinara, seasonings, and rice. Stir and remove from heat.
    Stir in half of the cheese into the mixture until incorporated.

    Stuff the peppers. Top with remaining cheese.

    Roast 15-17 minutes.
