Sprouting beans is a great way to have a constant supply of ultra-nutritious “greens” that costs very little.
Pics show a 9”x12 tray of lentil sprouts that took 3 days from 1 cup of dry lentils and some water. Prob about 4 big handfuls of sprouts.
I use sprouting trays but these can be done in pretty much any type of container, and once harvested can be stored in the fridge for several days.
Super easy to make these:
Just soak dry beans in water for 8-12 hours. Then drain, rinse, and keep covered with cloth or paper towel. Sprouts don’t need sunlight. Rinse and drain each day to keep them freshly moisturized and by day 3 they’re ready to harvest.
I eat them raw on top of beans and rice/quinoa. These ones (lentils) have a light crisp texture and mild peppery, earthy flavor.

When you cover it with a paper towel does it grow through it?
Quick note: I’ve soaked beans for between 8 and 24 hours and gotten results, though longer initial soaking seems to make them grow faster.
I sprout mung beans on a damp paper towel in my desk drawer. Very nutritious. But they smell like death.
