Perfect quick and easy salmon salad❤️ (plus some edamame on the side).

For the Salad (I forgot to take a picture before I started enjoying lol)
2 Foppen Atlantic Salmon Skewers (Costco)
2+ cups of Arugula
1 Tablespoon of Goat Cheese Crumbles
1/4 of lemon juice squeezed on top

I used the air fryer for the salmon skewers and the whole thing INCLUDING cooking the salmon takes like less than 15 minutes.
Add some edamame on the side (I like the single serve bags you can buy at Costco) and you have a protein and nutrient packed lunch/dinner for under 400 calories 🙂
