I was thinking about making this recipe. Any thoughts?

I have not tried this as a meal prep! But just a note as someone who has eaten a lot of leftover chicken picatta, the sauce does not compare to fresh as it will separate a bit.
Definitely still edible on days 4/5 I usually just lay the breast over a bed of rice or pasta and pour a small amount of sauce on top rather than making use of the whole pan of sauce. & then just have the veg in another compartment or container.

One of my favorite dishes! good luck!

The best part is having the chicken picatta with a salat on the side, so don’t forget to meal prep that

Yes, I do often. Most often I do the crock pot preparation. I skip dredging the chicken through flour. Once its cooked I let it cool and divide it in individual portions.

Not specifically, but leftover chicken piccata definitely gets eaten.

I’ve done it recently using the recipe from Downshiftology. I’d use less Parmesan in the dredging mixture, but I thought it kept and reheated well for the next four days. I reheated the chicken in the air fryer by itself because I’m kind of picky about reheated meat, and I just microwaved the amount of sauce I used each night on its own. It tasted good and emulsified just fine when reheated.
