My first week of harvest from my backyard has been great! My biggest problem now is knowing what to do with all of these peppers. This is my first year having a garden with peppers, I hope y'all can help me out with some ideas. I've been using what I can for cooking with but need long term storage before they rot/mildew.
Left plate is Anaheim, cayenne and Carolina reaper. Right plate is Cajun Belle, Thai hot peppers & more cayenne.
I've got a lot more Carolina reapers, Thai hots & Cajun Belles on the way.

Ferment into hot sauce. I make sauces from mixed varieties all the time. Bulk it up with some carrot if you want it milder, or not to keep the heat.
Start making a lot of indian and thai food.
I dry them in a dehydrator (keeps my habaneros in great shape for about 4y now) and freeze mine.
Dry is amazing for spicing a meal up in single portions or making some spice mix (perfect to gift).
Frozen you can easily take parts to cook, no need to cook huge ampunts, when you can just take a slice of the reaper.
‘My brothers in capsaicin’ is not something I knew I needed to read and will be stealing. Also, spice mixes or sauces might work, both sound very tasty.

Carolina reaper has to be one of the scariest looking peppers out there.
