


Did my first brisket yesterday. Smoked it unwrapped for 4 hours at (225) till temp reached 170. Wrapped in foil after that and took 3 more hours to reach temp of 200. Left in wrap and rested In my oven at 170. Overall very happy with how it turned out. It was super tender and not dry but needed to be a little more aggressive with the seasoning especially black pepper. Made some burnt ends that smoked uncovered for another hour after I started cutting into it .
