Cooked on my 36” built in coyote. Almost 16 hours at 200 then wrapped and finished at 250 for about 2-3 hours then held at 140 in a warming drawer for about 3 hours. Could have done better on the trim with that Mohawk in the middle.

    I need to get over my nerves of ruining a large piece of meat and try my hand at a brisket. I did a tritip in an attempt to smoke something. It was pretty good… but still wanna try a brisket.
