It's hot out and I have a lot of zucchini from the garden this year but I'm so tired of zoodles and air frying. u/bigbowlofregret mentioned in r/volumeeating that you can freeze peeled zucchini slices and use them to thicken & volumize smoothies and ice cream instead of Greek yogurt/ frozen dairy. To my surprise it worked! Frozen zucchini adds virtually no flavor to the ice cream and they are extremely low calorie! Great way to save zucchini over the summer, I love freezing stuff for later use in ice cream smoothies.

Recipe:
Add the following ingredients to a blender
– 1-2 cups ice
– 1 cup almond milk
– 100-200g frozen peeled zucchini
– 100g frozen Greek yogurt
– 20-30g chocolate baking powder
– 1 tablespoon pbfit
– 10-30g protein powder and xanthum gum (optional)
