Long time lurker, first time poster! I’ve taken so many great recipes from this group and I thought I’d add one! I know not everybody loves artificial crab, but I grew up with my mom making crab and pasta salad for 4th of July. The nostalgia in me was craving some, so I did some digging in how I might replicate it. I think I’ve created something pretty amazing based off her original recipe. If you’re a crab salad lover like me, let me know, people always think I’m weird for liking it.

The dill with the pepper and green onions are just so good and the crunchiness of the fresh celery is just so satisfying. I replaced the pasta with zucchini and go a little heavy handed on the artificial crab. Here it is below. Most of these ingredients can be bought at Walmart or any other grocery store.

Shopping list:

  • Salt
  • Pepper
  • Dill weed (spices section)
  • X1 large Zucchini
  • Artificial crab (12 ozs) I used crab bites from Walmart, they’re a dollar each.
  • Light mayo or miracle whip
  • Celery bushel
  • Green onion bushel
  • Olive oil

Start by chopping x1 zucchini into small cubes and sauté for 3 minutes in 1tblspoon olive oil (90 calories). Let cool and put into a mixing bowl.

Combined all ingredients below with the zucchini:

x4 packages of artificial Crab bites (100 calories each total of 400 calories) chopped to bits

X3 tbspoons of light mayo (150 calories total)

Half of a large celery bunch halves and chopped

Half bushel of green onion finely chopped

2 teaspoons dill weed

2 teaspoons of salt (add more if you like saltier)

Pepper to taste
Put in fridge to chill and to let zucchini and clearly absorb the flavors.

Its so much better overnight

Made about 3-4 servings or 6 cups total. I may double this for lunches for the whole week.

Something similar can be done for chicken salad. Maybe I try that next!
