Hi all, just wanted to share a little trick I have been using to fit three racks of baby back ribs at the same time. I found that if you use a rib rack and slide the ribs in as if they were books, they would fit awkwardly. Instead what I have been doing is “draping” them on the rack for the first 3 hours of cooking or so, by then they will have shrunk and be easier to fit flat. Smoke em flat the rest of the cook and enjoy. Also in my opinion no wrap and baste at the end is equal to or better than 3-2-1 and requires much less effort.

I swear its the ceramic and its cooking properties that make the Egg so remarkable. Ribs ase so predictably on point every time I cook them.

My ribs tend to get dry if I don’t wrap them. What’s your time & temperature?

I’ve been trying to figure out how to do multiple racks on my primo and this is perfect, definitely going to give this a go this weekend.
