    It took 7 years, but I finally got bored of my normal work lunch and decided to branch out into more interesting lunches!! I’m excited to get tons of new ideas from this sub.

    This took me like FOUR HOURS on Sunday but I made good use of my air fryer and rice cooker, as well as a ton of fresh from the garden veggies.
    So here is my first attempt at meal prepping a lunch that isn’t just a plain lettuce salad – Greek quinoa bowls!!

    I made my own tzatziki based on a recipe from an old cookbook of my mom’s (fresh minced garlic, finely chopped cucumber, fresh dill, fresh lemon juice and lemon zest, salt, pepper, Greek yogurt); I also made a tahini-honey sauce based on a blue apron recipe from last week (tahini, honey, olive oil, apple cider vinegar, water). Put the tzatziki and tahini sauce in small jars for transport to work.

    In the bowl: quinoa, spinach+spring mix, red pepper, cucumber, cherry tomatoes, green beans (roasted with olive oil, salt and pepper, and fresh minced garlic), feta, and kalamata olives (not pictured bc I forgot to add them until after I took a pic and started eating it lol).
    I used hard boiled egg as the protein today but air fryer chicken (marinated overnight Sunday in a balsamic vinaigrette) to use the rest of the week.
    For transport to work: quinoa and chicken in one container, veggies in another container, brought the entire bag of spinach with me, as well as the entire container of feta 🤣 I need to get better containers.
