Hi there! I've been lurking on this sub for the last couple days and getting helpful tips from older posts because I just got a stand mixer and decided to give macarons (French method) a try; I've been wanting to make them for years. I've made two batches so far (red ones are caramel apple, blue ones are cotton candy) and I have had so much fun making them!

I imagine it's just a lot of practice, but if anyone has tips on size consistency when piping the shells, I would be quite grateful! I start off piping really small and they get bigger as I go 😅 I do have a guide mat but I'm still having trouble making them all consistent.

    It could be the batter getting worked in the bag by your handling it as you go. The batter would be thinner and even though you follow a guide they could spread out more on the paper/mat.
