Grits with a beef, vegetable and peanut stew.

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    African Style Lamb and Peanut Stew (but I used gravy beef: cheaper here)
    1kg lamb, diced, in a large bowl, tossed with 3tsp curry powder, 1 tsp dried oregano, a pinch of cayenne and salt and pepper.
    Add 1 chopped onion. 1 large carrot, chopped, 1 red capsicum chopped. 500g kumara in cubes, 4 cloves garlic, chopped, 1 chili finely chopped, 400g tin chopped tomatoes, 125ml tomato sauce and 2 bay leaves. Mix thoroughly, transfer to a slow cooker and cook on high 4 – 6 hours until all is tender.

    Mix 1/3 cup peanut butter,1 tbsp lemon juice, 165ml coconut milk and add during the last 30 minutes of cooking. Stir in a cup of frozen peas and cook 5 minutes more.

    Pressure cooker grits: Mix 1 cup grits with 3 cups hot water and 1/2 tsp salt. Pressure cook 10 minutes. Then wait 15 minutes before opening the lid, and stir well adding 1 tbsp butter.
