Guanciale, Pecorino Romano, Peeled San Marzano tomatoes, pepper, olive oil drizzle. Was I off my rocker adding some Calabrian chili? I figured there was room to play a little since my Albanian wife wanted Ricotta Cavatelli. Still, there is no garlic and no onion.

Amatriciana has a pinch of chili in it.
Also onion isn’t completely off the list. It’s one of these things where if you get to a random street in a town near Rome and start knocking door by door asking “onion yes or not” out of 10 doors you’ll get 11 different answers.
