    It’s started to downpour about 20 mins after I wrapped it, so I had to finish it in the oven. But came out very nice. Would’ve like a little better bark and up the smoke flavor, maybe gotta try different pellets.

    About a 6 lb brisket – paprika, mustard powder, touch of thyme, salt and pepper

    Smoked at 225 until it hit 170 (about 4 hours) then wrapped in foil, cooked at 225 until it hit 202 (about 4 more hours) then rested at 170 for 2 hours.

    Next time, to prevent pooling liquid and get better bark, you can toss a small chunk of wood under the meat (to form a mound).
