Out of curiosity, I placed a thermometer on the top rack next to my brisket. It is consistently reading around 20 degrees lower than the built-in thermometer. I would expect some variance, especially on the top shelf, but this seems a bit too extreme. Is this normal? And if not, which reading do you think I should trust?

I’d clean the main thermometer after every cook. I’ve noticed temperature spikes if I did not.
Its normal. My new smoker reads 275 at the grates and under 250 on the top rack several inches above. If you want to make sure boil some water and check your probe and see how close it is. Agree with /u/def_unbalanced with cleaning the sensor, just make sure to use a soft sponge.
