Trying my luck at a pork butt and my first overnight cook. Hoping the temperature maintains and it’s not overcooked or raw in the morning. Hope I don’t ruin this chunk of meat.

    Are you wrapping and stalling at (it’s 1am here) at 3-4 am?

    Why are you doing a pork but over night unless it’s for breakfast. Ive never needed to do more than 5 hours on one and that was mostly resting because we left the house.
