It's been a couple of days since my coffees are bubbly and look horrible after 4-5 minutes.
The taste is good, but they don't look as they should.
I tried changing milk (and milk temperature), adjusting the grinder, coffee machine temperature, basically everything.

How many milk brands have you tried and are you using fresh milk? Also your steaming is too thick and uneven. Those milk foam and large bubbles are reacting to the coffee.
Also.. It s happening to my colleague as well
This used to happen to me. Try making microfoam, adding the air into the milk slowly instead of bubbling it.
PS- Bubbling and bad looking after sometime only happens with my macchiatos, does this happen with anyone else?
Try Tapping the jug on the bench after steaming and pop the extra bubbles.
A good way to “thin it out” is to pour into another milk pitcher (make sure it’s warm)then pour into your cup.
Also, Check the seals on your steam wands and make sure the ends are clean and done up tight.
