That drying method works for thin walled peppers like cayanne. Those peppers will get black mold inside of them drying like that. Cut them in half.

I did this with a pound of reapers and they all molded and I had to throw them out. Cut them open. My favorite method is to cut them in half and put them in a dehydrator outside for a few hours.
