Maybe ? I find the stall depends on a lot but beef ribs are tricky to temp. Make sure your probe is in meat and not a fat pocket. FWIW my beef ribs are usually 4-6hr cooks depending on size and temp.
What are you cooking at? I just did two big plate ribs (11lbs total) on Tuesday at ~275 and had no stall. But every cut (and every cook) is different, I also started a packer the night before, planning for a stall, that never came.

I usually hit stall in the 155 range. Thats when I wrap it or just before so that I don’t have to deal with the stall.

The last time I did beef ribs, I think I started at 250f for 3-4 hours, and I kicked up the temps to 325-350f for the remaining cook. Target was 203f or more in multiple places… I didn’t want to wrap

So when meat stalls in a smoker technically in the danger zone, is that anything to worry about? I’m new to smoking and currently in the middle of my first overnight cook. The pork shoulder I have is sitting at 140 for the last few hours but it’s clear the fat is rendering. I shouldn’t be concerned as long as the smoker itself is 225 right?

Don’t focus so much on probe temp… I’ve never temped ribs but I always check to see if they are “probe tender” by testing how easily the probe slides into the meat between the bones.

Just did these yesterday, about a 2 hour stall. Took 10 hours total for a similar sized rack at 250.

Any big hunk of meat can stall, and probably will stall. I run dino bones at 250ish and they usually take 7-8hrs
