Ingredients
200g small-caliber spaghetti
300g squid tubes (fresh or frozen)
1 red onion
1 liter fish stock
2 shallots
6 garlic cloves
20g dried chili
400g canned crushed tomatoes
200g cherry tomatoes
300g cleaned frozen shrimp
5g saffron
800g mussels (fresh or frozen)
500g clams (fresh or frozen)
1 bunch of parsley
Salt and pepper
Extra virgin olive oil
Preparation
Prepare the Sofrito:
Finely chop the shallots and 3 garlic cloves. Add to a pot with some olive oil and sauté until softened.
Add the dried chili and halved cherry tomatoes, and sauté for 2 minutes.
Add the canned crushed tomatoes and toasted saffron. Cook on low heat for 30 minutes.
Cook the Fideua:
In a large pan or paella pan, heat some olive oil and toast the spaghetti on one side.
On the other side of the pan, sauté the diced squid tubes.
Thinly slice the red onion and add it to the pan. Mix everything together with some toasted saffron.
Cover with fish stock and cook on low heat for 10 minutes.
Add the Seafood:
When the tomato mixture has 5 minutes left to cook, add the mussels and clams.
When there are 3 minutes left, add the shrimp. Mix well, cover, and cook for 3-4 minutes until the mussels and clams open.
Presentation
Plate the Fideua:
Place a base of fideua in a soup plate.
Add a couple of spoonfuls of the seafood stew in the center.
Finish with a few spoonfuls of a picada made in a mortar with parsley, the remaining garlic, a bit of olive oil, salt, and pepper.

Very interesting recipes, away from the standard. 🙂 But Ididn´t like that you killed Bugs Bunny. You cannot eat rabbits they are pets. 😃
