Ricotta and spinach Canneloni in golden tomato sauce – 563 calorie dinner

To make the filling I mixed together a 250g tub of ricotta with 85g of feta and 350g of silken tofu. Wanted to add more protein to the meal, it tasted amazing! Added salt, garlic powder, white pepper, juice of a whole lime, 100g frozen spinach and parsley. Topped with a simple sauce made from golden tomato passata and fried garlic, then mozzarella and Parmesan.
I definitely recommend adding silken tofu to your ricotta based fillings! I will be trying it next time I make lasagne.
