I think the serious eats website is terrible because I swear every so often a bunch of Kenji's recipe's get pushed to the front of the site, but you can't actually find them if you search for Kenji. So made me think, I wonder if there any hidden gems, or just weird silly ones.

I don’t know how obscure this is but I made this green thai curry with homemade curry paste and it’s one of the best things I’ve ever made.

The technique of dunking a tortilla in water before throwing it in skillet is a game changer. I do this with corn/flour tortillas, and pita bread. Game changer.
