2 oz Lean Ground Beef (cooked, fat drained, seasoned with chilli powder or low carb taco seasoning)
1/2 Zucchini hollowed out
2 Tbsp Pico de Gallo (mix diced tomato, onion, lime juice and Cilantro)
2 Tbsp Two Good Plain Yogurt
Cilantro to garnish

  1. Bake hollowed zucchini at 400F for 10 minutes
  2. Stuff with cooked beef mixture
  3. Bake for additional 10 minutes
  4. Top with yogurt, pico de gallo, and cilantro!

You could also top with cheese, guacamole or anything else taco you want (but this will add calories)
