I just ate the tip of my first ever picked reaper 10 minutes ago.
My tongue is still in pain.

I want to save the rest it and put it in an oil once all the others are ready. Can I freeze it sandwich baggie and defrost at a later date? (See picture 2)

    You absolutely can freeze them! The only problem is that when you thaw them they’ll be a little soft (but for most uses that won’t matter). I have ghost peppers from last year’s harvest still in my freezer and they’re great!

    Please don’t store fresh peppers by putting them in oil. Botulism needs an anaerobic environment, and fresh peppers submerged in oil is the absolute perfect breeding ground for it. Botulism kills up to 10% of the people that are infected with it, and is one of the most powerful toxins on earth.

    Fermented hot sauce. Very easy and shelf stable if pasteurized. Other options are to dry and make a powder, freeze or pickle.
