Hi everyone! I found this recipe online and want to try it. What would you all recommend omitting the flour with? I'm assuming they're using it as a thickening agent, right?

  • 1 ½ lbs chicken breasts cut in half lengthwise
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp smoked paprika
  • ¼ tsp black pepper
  • 3 tbsp avocado oil divided
  • 4 carrots chopped
  • 8 oz mushrooms sliced
  • 1 yellow onion sliced
  • 1 ¼ cup low sodium chicken broth divided
  • ¼ cup flour
  • 1 tbsp Dijon mustard
  • ½ cup half n half
  • 1 tbsp fresh thyme leaves

  1. Reduce the carrots to two, remove the flour, switch half and half for heavy cream

    when the dish is done cooking use 2 tsp of arrowroot to thicken. Or 2 tbsp to 1/2 cup of heavy cream to thicken. Depends on you.

    The lazy option is just leaving out the flour. It will still taste good a little runnier.

    I agree about reducing the carrots to two and using heavy cream instead of half and half. In step 5, you can stir a bit of xanthan gum (about 1/4 tsp) into the chicken broth before adding it to the pan. Or you can add some cream cheese (an ounce or two) in with the heavy cream.

  4. Reduce the carrots to two (as per u/zaskar and u/byttercup)
    Nix the flour, switch the half and half to cream cheese, and reduce until desired viscosity.

    Or,

    Puree some of the vegetables and add it back to the sauce (no flour, substitute heavy cream or cream cheese for half and half)

    Or,

    Add MORE low carb vegetables (pumpkin puree is my go to for this kind of dish).**edit: and don’t add the flour, sub heavy cream/cream cheese
