



Need some advice, where am I going wrong? I have some trouble determining if my stiff peaks are stiff enough, and I always struggle with the macaronage process. I’ve probably made 10+ batches and they all are a bit flat after I flatten them, but if I macaronage less than that, I find that when I tap the air bubbles they still have a point. Please help.

Looks like you are slightly overmixing. What you want to do is press harder when folding so more air bubbles get out, but do not fold too many times. It’s hard to get right
The meringue looks too soft to me.
