I love simple, delicious and easy gluten free vegan meals. Risotto is very easy to make. Plus, it’s a very versatile dish and delicious cold. It is a staple recipe in gluten-free vegan cuisine. I always make risotto without wine. This time I made it with mushrooms and courgette. It was delicious, well worth a try.

RECIPE:
4 spring onions
4-5 mushrooms
1 courgette
Salt
1 tsp parsley
1 tsp marjoram
1 tsp dill
3-4 tablespoons oil
3 tablespoons gluten-free vegan yogurt
2 servings quick rice
1-2 dl water

I chop the onion, mushrooms and courgettes. I start frying the onion in the oil, then the mushrooms go on top. When the mushrooms are a bit soft, you can add the courgette. I add the salt and the spices. I add a little water and cook until soft. I mix the yogurt with a little water and pour it over the mushroom courgettes. Cook for a few minutes and it’s ready. Enjoy!
