I meal prepped some DIY banh mi boxes with lemongrass beef

Lemongrass Beef:
* 4.5lbs of beef chuck or other well marbled piece of beef * 15 garlic cloves grated * 3 tablespoons of oyster sauce * ¼ cup of fish sauce * 1 tablespoon of soy sauce * 2 tablespoons of salt * 2 tablespoons of sugar * 2 tablespoons of black pepper * 1 small onion minced * 1 large stalk of lemongrass minced
1. Thinly slice beef into 2 inch long strips 2. Mix together with all other ingredients and marinade for at least 30 minutes (preferably overnight) 3. Cook on griddle over medium heat for 15 minutes, flipping every 3-4 minutes or until done
Pickled Vegetables:
* 2 daikon radishes * 3 carrots * 2 tablespoons of salt (Marinade) * 2 tablespoons of sugar (Marinade) * ½ cup of sugar (Pickling liquid) * 1 ¼ cup of white vinegar (Pickling liquid) * 1 cup of water (Pickling liquid)
1. Peel and julienne radishes and carrots, with the carrots being thinner than the radish. 2. Mix the vegetables in a bowl with salt and sugar, set aside for 20 minutes. 3. Rinse vegetables in water and transfer into a glass container. 4. In a bowl mix together pickling liquids. 5. Pour pickling liquid over vegetables and refrigerate.

“Faux” Green Papaya Salad:
* 1 cucumber * 1 carrot * 3 granny smith apples or 1 large green papaya * 1 small tomato * 1 thai chili sliced (optional) (salad dressing) * 2 cloves of garlic (salad dressing) * 2 tablespoons of fish sauce (salad dressing) * 2 tablespoons of honey (salad dressing) * Juice of 2 limes (salad dressing) * 1 tablespoon of tamarind paste OR (1 tablespoon of brown sugar + 1 tablespoon of apple cider vinegar)
1. Thinly slice cucumber, carrots and apples into strips and cut tomato into thin halves 2. Mix together salad dressing ingredients 3. Dress salad before serving
