Those look really good! If you want them to be more like crispy thin crust pizza I recommend putting the tortilla directly in a hot oven on the grate for a bit so it gets slightly hard and holds its shape, then put all the toppings on and put it in the oven directly on the grate again (with a sheet pan underneath). It’s kinda intensive but they come out real nice and crispy!
